So, I had mentioned in an earlier post that we are heading out camping. I am so excited. I don't think I was able to go for a week last year, so this is a treat!
Hubby has to stay home, as he is training for the next 2 weeks, starting Monday. He is more then happy to do that though.
But, he is driving us up, we are leaving at 7ish Saturday morning and hoping to be at the campgrounds by lunchtime. Hubby will stay for the weekend and head home Sunday after lunch. We are going to stay for the weekend with some of the family (cousins and aunts and uncles). It should be nice to get together with everyone after a while.
I tend to have a hard time keeping in touch with people, we just get so busy and bogged down...it is crazy trying to keep in touch. I really have to do better at it this year.
Then, one of my aunts and uncles are staying with us for the next week. Not sure where we are staying yet, going to play it by ear, but hopefully getting a site by a playground and close to the beach!!
Our family has always loved camping, it is in all of our blood!! I have said that if we could afford to we would camp all summer long. Just live there, in a tent, for the entire summer. I really could...maybe one day...I can dream, right? Who knows, maybe one day we will run some kind of a campground out in the middle of nowhere, right?
So, tomorrow is going to be filled with laundry, cleaning, pre-cooking (to make meals all the more easier!), packing and making sure the kids are ready to go. I think I will make some "Egg McMoms" for the car ride. That is exactly how it sounds...and muffin tins are great for shaping eggs the right way!
We also have our last church baseball game tomorrow night, so we will be packing up for that too. Thank goodness hubby only works a half day. I couldn't get it all done myself...
So, I am off to switch the laundry again. I will try to get on here one more time before I leave and then I won't be back for a week!! (and I am actually looking forward to having an electronic free week!)

There is a recipe below, if you like to cook from one. I don't use one.
I have just broken an egg into a muffin pan, mixed it up, put in the oven to cook.
Toast an english muffin and butter, lightly.
Lay slice of cheese on muffin, put egg on top, and top with salt and pepper. Put top of muffin on. These can be frozen. I have never frozen them before, but a lot of people have, so it is possible.
There are other ways, if you use regular, sliced bread, you break the eggs onto a cookie sheet that has a lip, so the eggs don't spill over. Then bake til cooked and slice to fit the bread!! There are so many different ways of making these. You can change toppings...sausage, cheese, egg. Bacon, cheese, egg. Throw on a tomato, lettuce...anything goes!
Egg McMoms
8 eggs
8 slices of ham or sausage patties cooked
8 slices of cheese (optional)
8 hamburger buns
Fry the eggs one at a time and break the yolk in each so the egg cooks hard. Place egg on the bottom of the hamburger bun, add ham or sausage, top with cheese and remaining bun half
To Freeze: Wrap in foil and bag together in a labeled Ziploc bag..
To serve: Remove from foil, wrap in paper towel and microwave until heated through ( about 1.5 min)

Thanks for the update. I've been trying to make them, Nicky showed me (yes it's true) but I on the stove top it's hard to keep the egg together. I like the muffin tin idea.
